From time to time I get the gumption to cook something when I am hungry for something in particular. I found this recipe on Pinterest and altered it to fit my “few ingredient-easy to make” lifestyle. Here’s the link to the original recipe:

This is my version, simplified…
The Sauce
1.5 cups Low-sodium beef broth
3 T Low-sodium Soy Sauce
3 T Natural Rice Vinegar
1 T Ground Ginger
1 T Cornstarch
The Rest
10 oz Sirloin Tip Steak
4 cups fresh Broccoli florets
1/2 cup Sliced Water Chestnuts, halved
2.5 cups Basmati Rice
1 T Sesame Seeds
2 T Olive Oil
The How-To
I used 2 Uncle Ben’s Ready Rice, so I just stuck them in the microwave while I did all the steps.
1. Heat half of olive oil in skillet/wok and saute broccoli for 5-6 minutes, stirring constantly.
2. Place cooked broccoli in a bowl.
3. Cut the beef in strips. Cook in the other half of the olive oil.
4. Mix together the sauce ingredients in a bowl.
5. When beef is cooked, put the sauce in the pan and the water chestnuts and stir until thickens up a bit.
6. Add broccoli to pan & stir.
7. Place the mixture over rice. Sprinkle sesame seeds over top. Serve immediately.
The particular ingredients I purchased, ended up being less than 300 calories per serving. Even with lower sodium ingredients, it is still pretty high in sodium, so this would be a recipe I wouldn’t make too regularly.
