Christmas Pancakes

Home alone for Christmas, so decided to try a new recipe, and it turned out delicious!  Watch out Rachel Ray! (JK!)

Nice & thick & fluffy!  I added some extra ingredients just because it’s Christmas!

Makes 12 pancakes

1 1/3 c  White Whole Wheat Flour
1 1/3 c  Oats
8 tsp     Sugar (I used Stevia)
1/4 tsp  Salt
2 tsp     Baking Powder
1 Tbsp   Ground Cinnamon
1/2 cup  Craisins
1/2 cup  Milk-Chocolate Chocolate Chips
2 tsp     Egg Substitute
2 cups   Unsweetened, Plain Soy Milk

Mix ingredients together.  Bake in skillet as you would normally bake pancakes.  

My delicious version came to only about 130 calories per pancake…and they are way better than anything store bought 🙂 Because I added the extra “treat” ingredients, I didn’t care for any syrup or anything additional.  However, I could see sprinkling them with a little powdered sugar.
