Merged a couple of recipes I found on-line for a play off of PF Changs Lettuce Wraps.
Makes 5 servings
1 1/2 Tbsp Coconut Oil
Green Leaf Lettuce Leaves
Filling:
1 1/2 cups shredded carrots
1/2 yellow onion, chopped
3 cloves garlic, chopped
1 can water chestnuts, chopped
1 1/2 cups Coleslaw
1 lb Lean Ground Turkey
Sauce:
6 Tbsp Hoisin Sauce
1 1/2 Tbsp Wheat Free Tamari Sauce
1 Tbsp Toasted Sesame Oil
1. Melt coconut oil in skillet over medium-high heat.
2. Add carrots & onion and saute for several minutes.
3. Add garlic & turkey and saute until turkey is cooked through (3-5 minutes).
4. Add sauce & water chestnuts and cook til warmed.
5. Add coleslaw last so it doesn’t overcook and stays crunchy.
6. Scoop turkey onto lettuce leaves & wrap.
