Turkey Quinoa Meatballs

Merged a couple of recipes together to make these meatballs.  The meatball recipe is basic and delicious.  You can choose any type of sauce you want to use on them.  I did a variation of the sauce for this recipe here.  I did not have all the ingredients and altered it quite a bit. However, in the end, I had 18 meatballs around 100 calories each, even with the sauce.


Makes 18 meatballs.

20 oz Jennie-O Lean Ground Turkey
1/2 c shredded carrots
1/2 c chopped celery
1/2 c chopped onion
1/2 c chopped peppers (yellow, red, green)
2 c cooked Quinoa
2 T chopped parsley
1/8 tsp salt
1/8 tsp ground pepper
1/4 tsp garlic powder
1/4 tsp chili powder (I think it could have used more)
1 egg

The sauce I used is from here.  

1.  Cook quinoa according to directions.
2.  Soften veggies in skillet with olive oil.
3.  Combine turkey, quinoa, veggies, egg and all spices and mix together by hand.  
4.  Form into balls and place in 9×13 pan.  
5.  Cover in whatever sauce you choose.  

Bake at 350 for 1 hour.
